Olive Oil Analysis

Is your olive oil Extra Virgin? Baker Wine & Grape Analysis is an approved lab by the COOC to give you accurate results. To gain certification, oil must have a chemical analysis conducted to determine if the oil contains 0.5 % or less free fatty acids as well as a peroxide value of 20 meq O2/kg or less. Additionally, if you produce 50 gallons or more the ultra violet (UV) absorbency analysis is also required.

UV Absorbency for extra virgin olive oil is as follows:

  • K 270 less than 0.22
  • K  232 less than 2.50
  • Delta K less than 0.01

BWGA offers two analysis packages for Olive Oil

  • Short -  for producers of  <50 gal. Free Fatty Acidity and Peroxide: $50
  • Long – for producers of  >50 gal.  Free Fatty Acidity, Peroxide and UV Analysis: $70
  • Sample requirement -  100 mL of well mixed oil.
