Olive Oil Analysis
Is your olive oil Extra Virgin? Baker Wine & Grape Analysis is an approved lab by the COOC to give you accurate results. To gain certification, oil must have a chemical analysis conducted to determine if the oil contains 0.5 % or less free fatty acids as well as a peroxide value of 20 meq O2/kg or less. Additionally, if you produce 50 gallons or more the ultra violet (UV) absorbency analysis is also required.
UV Absorbency for extra virgin olive oil is as follows:
• K 270 less than 0.22
• K 232 less than 2.50
• Delta K less than 0.01
Baker Wine and Grape Analysis offers two analysis packages for Olive Oil
Short - for producers of <50 gal. Free Fatty Acidity and Peroxide: $50
Long – for producers of >50 gal. Free Fatty Acidity, Peroxide and UV Analysis: $70
Sample requirement - 100 mL of well mixed oil.

Microbial Analysis
Baker Wine & Grape also offers microbial analysis. We can examine your wine or juice under the microscope for microbial activity. We offer cultures for detection of yeast, spoilage yeast and spoilage bacteria. We can detect Brettanomyces in one day using our NEW Elisa test. We can culture for bottle sterility and also perform Velcorin trials prior to bottling.
